About the role
Commis Chef | Harborne, Birmingham | £31,000 + circa £4,000 tronc
What’s in it for the successful Commis Chef?
- Salary of £31,000 per annum
- Tronc of circa £4,000 per annum on top
- 45 hours per week, permanent
- Closed Mondays and Tuesdays, so two fixed consecutive days off every single week
- No split shift, because the bar trades through the afternoon and the kitchen runs straight through
- One daytime service on a Sunday with an early finish
- 28 days holiday including bank holidays, rising by a day for every year of service
- 5% contributory pension, and Wagestream so you can draw your pay as you earn it
- Staff meal on duty and staff discounts
- Head Chef and Sous Chef in post, and a small brigade where you will actually be taught
- Training funded by a university rather than squeezed in when it suits, and a group of kitchens to progress through
- Post-placement support from Tonic
Tonic are pleased to partner with University College Birmingham on their new commercial restaurants, and are recruiting a Commis Chef for their new site in Harborne, Birmingham. This is a commercial kitchen. It is not a training site and you will not be teaching. The food is small plates built on exceptional fresh produce, so the prep is proper and the skills you pick up here will carry. As Commis Chef you will work across sections, learn from a Head Chef and Sous Chef who are in post before you start, and build the foundations to move up. The rota is genuinely rare for a kitchen like this, two fixed consecutive days off every week and no split shift.
What are we looking for from Commis Chef candidates?
- Some commercial kitchen experience, or a relevant qualification and the drive to make a career of it
- Good basic knife skills, and care taken over prep
- Keen to learn produce-led cooking and a small plates style
- Understands the basics of food safety and allergens, or is willing to be trained properly
- Clean, organised and quick to pick things up
- Reliable, on time, and easy to have in a kitchen
- Available Wednesday to Sunday, including evenings and the Sunday daytime service
